Our head chef James has shared another one of his Our head chef James has shared another one of his amazing recipes, this time a creamy Coconut Chicken Curry 😍 be sure to let us know if you try it!⁠

Ingredients:⁠
⁠
2 chicken breasts ⁠
1 large onion (finely chopped)⁠
2-3 cloves of garlic (finely chopped) ⁠
1 tsp ginger puree⁠
1 taste pot of pataks tikka masala curry paste ⁠
150 ml of chopped tomatoes/ passata ⁠
1 tsp ground coriander⁠
1 tsp ground cumin⁠
1 tsp gara masala ⁠
1 tsp medium curry powder ⁠
1 tsp turmeric ⁠
400ml tin of coconut milk⁠
Lemon juice ⁠
Fresh chopped coriander ⁠
Salt & Pepper ⁠

Method:⁠
⁠
In a large pan heat up a couple of tablespoons of sunflower or vegetable oil add in the onion and sweat them down until soft. ⁠
⁠
Next add the garlic and ginger puree in with the onions and cook for a couple of minutes. Mean while dice the chicken into even chunks. ⁠
⁠
Add the diced chicken to the pan with the onions garlic & ginger and brown the outside. ⁠
⁠
Add the curry paste and stir well, allow this to cook for a few minutes to release all the flavours.⁠
⁠
The tomatoes go in next ensure these are stirred in well and then add your ground spices and a touch of salt and pepper.⁠
⁠
Allow this to cook for a minute or so before adding the coconut milk. Stir well and allow to simmer for 15-20 minutes.⁠
⁠
Taste for seasoning and adjust if needed and finish with a good squeeze of lemon & a handful of chopped coriander. ⁠
⁠
For a Vegetarian or Vegan alternative replace the chicken with Veg of your choice or meat substitute.⁠
⁠
This recipe also works really well with lamb if you like it a bit spicier use madras curry instead. ⁠
⁠
Serve with rice and flatbreads
